We’re Back!
After a long, busy Thanksgiving break… we are back!
The most relaxing part of the break was our visit to Michiana, Michigan (my new favorite getaway) with family. We walked along the beach, shopped for antiques and ate a lot of pizza. It was a great way to end the weekend!

Sweet -on- Potatoes
Truth be told, I have never been a fan of sweet potatoes… until these!
Our friends, Maureen & Jeff, are the best chefs I know… so when they made sweet potatoes as a side to our Friends Thanksgiving Meal, I was intrigued… and they did not disappoint!
The icing on the potato? (I am told) they are easy to make as well.
Thyme-Roasted Sweet Potatoes
Ingredients
4 medium sweet potatoes, peeled and cut into 1 1/2-inch-thick rounds
3 tablespoons olive oil
8 large garlic cloves, minced
1/3 cup fresh thyme leaves, plus 6 thyme sprigs for garnish
1 teaspoon kosher salt
1 teaspoon red pepper flakes
Instructions
Preheat oven to 450°F
In large mixing bowl, combine all ingredients and toss
Arrange potato slices in single layer on heavyweight rimmed baking sheet or in 13×9-inch baking dish
Place on top rack of oven and roast until tender and slightly browned, about 40 minutes
Serve warm or at room temperature, garnished with thyme sprigs
